"What I learned most is this: Healthy food is a matter of good ingredients, thoughtful preparation, and layering upon layering of flavor. Previously, healthy food has been presented as eliminating or substituting something (substituting butter with margarine, eliminating slat, etc.) rather than emphasizing the food itself. In the class, I learned how to layer flavor, use texture, and enhance simple ingredients with herbs, dashes of this and that to achieve a satisfying dish. I have looked at cooking differently ever since!"
